I cooked this tonight, not from recipe but fro how I remembered it from restaurants I’ve ordered it from. Natalia gave it the thumbs up.
Ingredients:
- 1 Tbsp minced garlic
- 1 Tbsp minced ginger
- 2-3 red chilis, chopped, with seeds
- Chopped spring onions
- 1 large rpe tomato, diced
- 1.5 cups of chicken broth
- 1/2 cup of Chinese brown vinegar
- 1/3 cup light soy sauce
- 1 Tsp ground black pepper
- Salt or MSG
- 2 eggs
- 1 Tbsp corn starch
- Heat oil in a sauce pan and fry garlic and ginger and chili until aromatic. Add tomatos and spring onlions and fry until tomatos are soft and juicy.
- Add pepper and chicken broth and pepper and simmer for 2 minutes.
- Add vinegar, water and soy sauce and simmer for 5 minutes
- Crack two eggs into the soup and stir through
- Add corn starch and stir through to thicken slightly.Try adding Tofu or noodles!
