Ingredients
- Egg plant
- Spring onion
- Ginger
- Garlic
- Cooking wine
- Bean paste
- Sugar
- Rice vinegar
- Soy Sauce
- corn starch
- Chicken broth
- Oil
Notes: After step one you may like to stir fry some pork mince or finely sliced strips for meaty goodness and added flavour.
- Deep fry egg plant in hot oil.
- Remove oil from the wok exept one tablespoon. Add 2 tablespoons of bean paste, minced ginger and garlic and stir fry until aromatic.
- Re add the egg plant to the wok and briefly stir fry. Add the sugar and liquid ingredients and simmer to let it thicken.
- Add corn starch to thicken sauce and serve.
