Recipe: Yu Xiang Qiezi

Ingredients

  • Egg plant
  • Spring onion
  • Ginger
  • Garlic
  • Cooking wine
  • Bean paste
  • Sugar
  • Rice vinegar
  • Soy Sauce
  • corn starch
  • Chicken broth
  • Oil

Notes: After step one you may like to stir fry some pork mince or finely sliced strips for meaty goodness and added flavour.

  1. Deep fry egg plant in hot oil.
  2. Remove oil from the wok exept one tablespoon. Add 2 tablespoons of bean paste, minced ginger and garlic and stir fry until aromatic.
  3. Re add the egg plant to the wok and briefly stir fry. Add the sugar and liquid ingredients and simmer to let it thicken.
  4. Add corn starch to thicken sauce and serve.
